Anar ki Barfi


What You Need:

  • 2 cups pomegranate (anar) juice
  • 1 cup castor sugar
  • 1/2 cup ghee + for greasing
  • 1 cup semolina (rawa / sooji)
  • 3 to 4 tablespoons roughly chopped assorted nuts (cashew nuts, pistachios and almonds)
  • 2 tablespoons raisins
  • 1 teaspoon green cardamom powder
  • 1 cup khoya or mawa  
  • Ask a parent or adult to help with this recipe
  • Grease an aluminium tray with ghee.
  • To make the syrup, heat the pomegranate juice in a non-stick pan, add the castor sugar and mix well. Cook till the mixture thickens.
  • Heat the ghee in another non-stick pan. When it's hot, add the semolina and sauté on medium heat for 8 to 10 minutes, stirring continuously. Add assorted nuts, raisins and green cardamom powder and mix well. Add the syrup and cook for 5 to 6 minutes. Add khoya, switch off the heat and mix well.
  • Pour the mixture into a greased aluminium tray, spread it evenly and set aside to cool.
  • Cut into square pieces when completely cold. Arrange the barfi on a serving plate and serve immediately.
