Cream Style Corn Espresso

What You Need:
  • 1 tin cream style sweet corn
  • 2 tablespoons oil
  • 1/2 medium onion, diced finely
  • 1/2 medium green capsicum, cut into small cubes
  • 1/2 medium red capsicum, cut into small cubes
  • 1/2 medium yellow capsicum, cut into small cubes
  • 1 teaspoon red chilli sauce
  • 1 teaspoon soya sauce
  • 2 tablespoons spring onion greens, chopped
  • Salt to taste
  • 1 teaspoon vinegar
  • 1/2 head iceberg lettuce
  • Ask a parent or adult to help you with this recipe
  • Heat oil in a non-stick pan.
  • Add the diced onions and green, red and yellow capsicum and saute.
  • When the onions are translucent, add half the red chilli sauce and soya sauce and mix. Add the cream style sweet corn and mix well.
  • When the mixture looks well mixed, add the spring onion greens, salt and the remaining red chilli sauce and vinegar. Mix and cook till the mixture thickens. Take it off the heat. Do not let the greens lose colour.
  • Chop the iceberg lettuce and put it into small glass cups.
  • Put the sweet corn mixture over it and serve immediately.
