Suji and Coconut Barfi

Recipes
What You Need:
  • Semolina (suji or rava) - 2 cups
  • Freshly scraped coconut - 1 cups
  • Sugar - 1 cups
  • Baking powder - 2 teaspoons
  • Yoghurt - 1 1/2 cups
  • Ghee - 1/2 cup + for greasing
  • Rose water - 1 teaspoon
  • Juice of lemon - 1/4
Method:
  • Preheat the oven to 180 degrees Celsius. Grease a barfi tray with ghee.
  • Heat 1 cup of water and sugar in a non-stick pan and cook till the sugar dissolves.
  • Add lemon juice to the sugar syrup, mix well and cook till it thickens. Remove from the heat and set aside.
  • In a bowl, add the remaining ingredients, stirring well after every addition. Start with semolina and baking powder. Then add yoghurt and mix, ghee and mix, coconut and mix and rose water and mix well. Refrigerate for 30 minutes.
  • Spread the semolina mixture evenly in the greased tray. Smoothen the surface with a little water. Cut into squares and place the tray in the preheated oven. Bake for 45 minutes.
  • Remove the tray from the oven. Pour sugar syrup on top and let the barfi pieces soak the syrup.
  • Separate the pieces and serve.
