Worcestershire sauce is a fermented liquid condiment. The main ingredients in the sauce are vinegar, molasses, sugar, anchovies, water, onions, salt, garlic, tamarind concentrate, cloves, natural flavourings and chilli extract. Worcestershire sauce is generally not suitable for vegetarians as it contains anchovies. However, several brands sell anchovy-free varieties, often labelled as vegetarian or vegan.Worcestershire sauce has its roots in India, but was actually created by accident in its namesake town of Worcester, England in 1835. As the story goes, Lord Marcus Sandy had returned home to England to retire after successfully governing Bengal for many years. He so missed his favourite Indian sauce that he commissioned two chemists, John Lea and William Perrins, to come up with a reasonable copy of the sauce and thus they created Worcestershire sauce.
