
INGREDIENTS
For the cover:
- ½ cup maida (all-purpose flour) or wheat flour
- 2 teaspoons oil
- Water and salt as needed to knead the dough
For the stuffing:
- 1 cup finely cut vegetables of choice (onion, carrot, cabbage, cauliflower, capsicum, beans and spring onions)
- ½ cup crushed paneer
- 1 tablespoon finely chopped garlic
- Soya sauce, vinegar and chilli sauce to taste
- Salt and black pepper to taste
METHOD
- To make the cover, mix together the flour, salt, oil and water and knead them into a soft dough. Let the dough rest for 20 minutes.
- To make the stuffing, put oil in a pan and when heated, add the onion and garlic.
- Once they start turning brown, add the rest of the vegetables and paneer and sauté on a high flame.
- Add the soya sauce, vinegar and chilli sauce and mix well.
- Add salt and crushed pepper, mix well and turn the heat off. Let the stuffing cool.
- To make the momos, take a small ball from the dough and roll it into a thin circle.
- Add the stuffing and fold it into a semi-circle to give it the shape of a momo. You can use momo shapers too.
- Add some water into your steamer (a dhokla steamer can be used).
- Grease the tray with oil and when the water starts to boil, put the momos in the steamer.
- Let them steam for 7 to 10 minutes. Take them out and serve hot with Schezwan chutney or garlic-chilli chutney.
