Researchers in Mexico have devised a technique to make tortillas last longer without the need for refrigeration. Scientists created a wheat flour tortilla using probiotics that extend the shelf life of the tortilla to around a month, providing a suitable food option to people who cannot afford refrigerators. Probiotics, found in fermented products, are tiny organisms that are advantageous to health. According to researchers, these tortillas are preservative-free and a nutritious choice. They have the potential to reduce people’s dependence on refrigeration and artificial preservatives in the future.
